Update on the portable air fryer experinent: I got to eat delicious, MCAS safe food at my MIL’s house for the first time in years :)
I brought my food all prepped in the glass tupperware boxes this air fryer uses and kept them refrigerated while everyone else’s food was in the oven/on the stove. Then when the main dish was resting before serving, I was able to make my entire meal in 15 minutes and have it plated and out of the way before anyone needed the counter space I was using, drastically decreasing the risk of cross contamination from things like gluten and all my other allergies that tend to be prevalent in other people’s kitchens.
I did cheat a little by pre-roasting my potatoes beforehand at home until they were halfway done, otherwise I would have needed 30 minutes. But yeah. Huge success in terms of increasing my ability to eat safely at other people’s houses.
I can actually spend time with people and eat again. This is going to be huge for managing my health issues and being able to socialize again. I won’t have to pick one or the other quite so often anymore.
Yay 💖
