"Bicol Express" is a pork dish cooked in coconut milk and chili [other variations may use string beans, "bagoong" or shrimp paste and pineapple]. You may think that this dish comes from Bicol, but it is actually from Malate, Manila. What's more strange is that, it was invented by a non-Bicolana from Laguna together w/ her brother that gave the name "Bicol Express" from the trains travelling to Bicol around 1960s.
