"Tortang talong" or Eggplant Omelette. This Filipino style omelette got it's name from the word "Torta" a flat bread that originated from Spain (though, in Italy and some countries in the West, torta is a cake. In Mexico and some Latin speaking countries, it is a sandwich). As to how the name find its way to the Filipino cuisine is perhaps from the Spanish that occupy the country. Eggplant is the main ingredient of this dish. Grill or boil the whole piece of "talong" or eggplant, remove the skin, then flatten the eggplant and dip in an egg mixture [ground pork, potato & onions can be mix depending on cook's preference] then fry. However, in Visayas & Southern part of the country, Torta refers to a rich sponge cake made of egg yolk.
