Ingredients: 1 pint vanilla bean ice cream. 8 waffle cookies. 1 cup mixed berries strawberries, blueberries, raspberries. 2 tablespoons maple syrup.
Instructions: Allow the vanilla bean ice cream to soften slightly at room temperature for easier spreading. Place four waffle cookies on a clean surface. Spread a generous scoop of softened vanilla bean ice cream onto each waffle cookie. Top the ice cream with another waffle cookie to create a sandwich. Press down gently to adhere the cookies together. In a small saucepan, combine the mixed berries and maple syrup. Cook over medium heat, stirring occasionally, until the berries break down and the mixture thickens slightly, about 5 minutes. Remove from heat and let cool slightly. Using a fork or potato masher, mash the berries until desired consistency is reached. Allow the berry mash to cool completely. Once the berry mash is cooled, spoon it over the assembled ice cream sandwiches. Serve immediately, or wrap each sandwich in parchment paper and freeze for later enjoyment.
