Ingredients: 4 cups of grapefruit segments, seeds removed. 2 cups of granulated sugar. 1/4 cup of fresh lemon juice. Zest of 1 grapefruit. 1/4 teaspoon of butter optional, to reduce foaming.
Instructions: Start by getting the grapefruits ready. Slice them in half, then take out the seeds. After that, carefully cut off the pith and membranes from the grapefruits. Place the grapefruit segments, granulated sugar, and fresh lemon juice in a large pot with a heavy bottom. Give them a half hour or so to macerate and release the juices. Add the optional butter and the zest of the grapefruit to the pot after it has macerated. When cooking, the butter helps to lessen foaming. Bring the mixture to a gentle boil by placing the pot over medium heat. To make sure the sugar dissolves completely, stir it from time to time. After the mixture reaches a boiling point, lower the heat to a simmer and let it cook for 30 to 40 minutes, or until it thickens and takes on the desired consistency. Stir from time to time. A small amount of jam should be tested by placing it on a cold plate and letting it sit for a minute. It's ready if it wrinkles when you press it with your finger. If not, cook for a few more minutes and run another test. When the jam is done, take it off the heat and allow it to cool a little. Eliminate any foam that might have accumulated on the exterior. With a 1/4-inch headspace, pour the hot jam into glass jars that have been sterilized. Tightly seal the jars. To make sure the jars are properly sealed and preserved, process them for ten minutes in a water bath canner. The jars should be taken out of the canner after processing and allowed to cool to room temperature. Make sure the seals are tight by checking them. Store your grapefruit jam jars in a dark, cool place after labeling and dating them. As it cools, the jam will get thicker still. Savor your homemade grapefruit jam as a delectable condiment or on toast or muffins!
