A tasty and protein-rich breakfast with split peas, eggs, and a BBQ twist. Served in Mason jars so you can take it with you in the morning.
Ingredients: 1 cup split peas, rinsed. 2 cups water. 4 eggs. 1 cup cherry tomatoes, halved. 1/2 cup red bell pepper, diced. 1/4 cup red onion, finely chopped. 1/4 cup barbecue sauce. Salt and pepper to taste. 2 tablespoons olive oil. 1/4 cup cheddar cheese, shredded. Fresh parsley for garnish.
Instructions: In a saucepan, combine split peas and water. Bring to a boil, then simmer for 20-25 minutes or until peas are tender. Drain any excess water. In a skillet, heat olive oil over medium heat. Add red bell pepper and red onion, saut until softened. Add cherry tomatoes and cook for an additional 2 minutes. Stir in cooked split peas and barbecue sauce. Season with salt and pepper to taste. In a separate pan, fry eggs to your liking. Assemble the Mason jars by layering split pea mixture, fried eggs, and shredded cheddar cheese. Garnish with fresh parsley and seal the jars. Reheat in the microwave or enjoy cold for a quick and delicious BBQ breakfast on the go!
