A tasty and protein-rich breakfast with split peas, eggs, and a BBQ twist. Served in Mason jars so you can take it with you in the morning.
Ingredients: 1 cup split peas, rinsed. 2 cups water. 4 eggs. 1 cup cherry tomatoes, halved. 1/2 cup red bell pepper, diced. 1/4 cup red onion, finely chopped. 1/4 cup barbecue sauce. Salt and pepper to taste. 2 tablespoons olive oil. 1/4 cup cheddar cheese, shredded. Fresh parsley for garnish.
Instructions: In a saucepan, combine split peas and water. Bring to a boil, then simmer for 20-25 minutes or until peas are tender. Drain any excess water. In a skillet, heat olive oil over medium heat. Add red bell pepper and red onion, saut until softened. Add cherry tomatoes and cook for an additional 2 minutes. Stir in cooked split peas and barbecue sauce. Season with salt and pepper to taste. In a separate pan, fry eggs to your liking. Assemble the Mason jars by layering split pea mixture, fried eggs, and shredded cheddar cheese. Garnish with fresh parsley and seal the jars. Reheat in the microwave or enjoy cold for a quick and delicious BBQ breakfast on the go!

1 pound split dry peas
Three small red skin potatoes
I pour my dry -peas directly into an appropriately sized pot. Like shown
Add 2 pints of hot water
The peas will clump together, separate them with your fingers
bring peace to a rolling boil for about five minutes
turn your stove off and dice your potatoes. Your peas are going to absorb the very hot water while you do this
Add your potatoes. add about 20 shakes of a salt shaker and about 20 of a pepper
Cook to your hearts desire. I like my peas a little mushy So I put them back on for a while
Finally I add about two or 3 tablespoons of margarine at the end, because I am #southern
