Tonight's delight: my half-assed take on a (GF) maze-linguine!
Based on another one from this guy, who has a lot of easy and tasty home cooking stuff.
Maze Soba at home
As is so often the case, I ended up making a couple of substitutions. I used a chopped regular onion and some minced garlic at the beginning, and later on added some green onion and more garlic instead of the garlic chives. Not the same taste, but not bad at all.
(We actually do have some garlic chives in a planter outside! But, I didn't remember to freeze any earlier in the season this year. Late November in the cold rain did not seem like the healthiest time to go cutting them back enough to use for this recipe.)
We did also have onsen tamago (easy method!) on top, instead of a raw yolk. Largely because my partner is not a huge fan of runnier egg textures outside carbonara--for whatever reason, that's fine. 🤔 And I thought he might be more willing to eat the gently coddled kind, especially mixed in with everything else. Seemed to go over well enough.
Note: You may want to skip the soft egg entirely if you're, say, in the US and relying on supermarket eggs. As pointed out in the onsen tamago link, temperatures don't get high enough to be absolutely sure it will kill all potential salmonella. British (and Swedish, that I know of) eggs are fine to eat raw too. It would give a different taste/texture, but I bet a fried egg on top would be a good addition instead.
Anyway, great results for not that much effort other than a little vegetable prep. I really hate julienning cucumbers with these bendy hands, but it was worth it.

추석 때 처형네 식구가 부산에 와서 칸다소바 본점에 갔다. 서울 서촌점이나 부산 서면점이나 마찬가지로 여기는 20대 손님이 대부분이고 30대도 별로 없다. 또, 여자끼리 오거나 커플은 많지만 남자끼리 오는 손님도 거의 없는데, 그날은 아주 특이하게도, 휴가 나온 징집병(?) 3명이 보였다.
여기 맛이 생각나지만 집에서 나오기는 너무 귀찮은 날에 몇 번 마눌님께서 마제소바 제조를 시도해 보셨는데, 비슷한 맛도 나지 않는 것을 보니.. 50여가지 재료에.. 만들기가 어려워 일본에서도 별로 파는 집이 없고.. 하는 말이 사실인지도 모르겠다.
가게에 붙어 있는 메뉴얼에 따르면 마제소바가 나오면 일단 비빈 다음 좀 먹어보고, 나중에 식초를 넣으라고 되어 있는데... 서촌에서 처음 먹었던 날을 제외하면 무조건 처음부터 식초를 넣고 있다. 이 맛에서 식초가 빠지면 뭐랄까.. MSG 안 들어간 중화요리? 마제소바의 감칠맛은 식초에서 나온다.
여기는 나름 레트로 인테리어를 추구해서 요즘 잘 쓰지도 않는 형광등 조명이 달려 있고, 심지어 주황색이다. 주황색 조명을 받으니 오늘따라 식초병이 예뻐 보여서 메인 음식은 놔두고 식초병을 찍어 보았다. 그리고, 평소보다 오래 기다린 소바가 나오자마자 듬뿍 쳐서 먹었다, 식초.
During Chuseok holydays, my brother-in-law's family came to Busan, so we visited "Kanda Soba". Like the Seochon branch in Seoul or Seomyeon branch in Busan, most of the customers here are 20s, and there are not many even over 30s. Also, there are a lot of women visitors or man & woman couples, but few men only groups come here, but on that day, very unusually, three conscripts(?) who were on vacation were there.
On days when I miss the taste of this place but was too lazy to leave the house, my wife tried making "maze-soba" a few times, but it didn't taste the same at all.
According to the manual attached to the wall of the bistro, when the maze-soba is served, you should try it first without vinegar and then add some vinegar later. However, except for the first time I ate it at Seochon branch, I always add vinegar from the beginning. What if the vinegar is missing from this taste? It is just like the Chinese food without MSG. The umami of maze-soba comes from the vinegar.
In pursuit of a retro mood, the fluorescent lights was set in the shop, which are not often used these days, and those are even orange lights. When it was lit up in orange, the vinegar bottle looked pretty, so I put aside the shot of main dish, instead, took a shot of the vinegar bottle. And when the soba was served, that I waited longer than usual, I ate it with plenty of that vinegar.
