Vegan Ground “Beef”
Ingredients
1 large cauliflower head
20 mushrooms (1.5lbs?)
1 cup walnuts (but since I don’t want to do this...more mushrooms! So grand total of 2lbs mushrooms)
1 medium onion
2 cloves garlic
1 TBS parsely
1 1/2 tsp oregano
1 1/2 tsp cumin
1 tsp tumeric
1 tsp chili powder
1 tsp paprika
1 tsp salt
1/2 tsp black pepper
2 TBS tomato paste
2 TBS olive oil
1 TBS soy sauce
Steps
Preheat oven to 300. Oil baking sheet.
Precut cauliflower into small florets for easy handling.
Using the coarse side of a grater, grate the cauliflower, mushrooms, and onions into a bowl
Grate/mince the garlic into tiny pieces. Add to bowl.
Add all seasonings to bowl. Stir to mix everything. Consider wha seasonings you want to use based off intended future use.
Roast in oven for 1 hour, stirring every 20 mins to ensure even cooking.
Turn off oven and let sit for 15 mins.
Use as ground beef! Hamburgers, tacos, pastas. Can be refrigerated for 5 days or frozen for 3 months.

Vegetarians rejoice!
Ingredients
1 medium eggplant
2 tbsp. extra-virgin olive oil
2 tbsp. soy sauce
1 tsp. maple syrup
½ tsp. smoked paprika
½ tsp. Liquid Smoke
Freshly ground black pepper
Instructions
Preheat oven to 300°. Line 2 baking sheets with parchment paper.
Cut eggplant in quarters, lengthwise. Slice each quarter into long, thin strips.
In a small bowl, whisk together olive oil, soy sauce, maple syrup, paprika, and liquid smoke.
Place eggplant slices onto baking sheets and brush both sides with sauce. Season with pepper.
Bake until eggplant is cooked through and beginning to get crisp, 45-50 minutes.
Frying option here!
All same ingredients except do not put olive oil in the sauce!
Fry over med-high heat in a cast iron skillet. Will take about 2 mins per side to crisp up.
Best enjoyed immediately! (So maybe not good for meal prepping eggplant bacon, egg, cheese frozen sandwiches like I was planning.)
Update: Go super minimal on the oil otherwise it’ll just taste like oil.
General Notes
Peel the skin off. It got super leathery, at least when frying.
Maybe marinade in the sauce? It was too runny to stick so...
I sprinkled paprika and pepper on each side in addition to the sauce beforehand.
