Ingredients
1/2 cup flour
1/2 teaspoon baking powder
1/4 teaspoon ground cinnamon
A pinch of salt (less than 1/8 teaspoon)
1 large egg, lightly beaten
2 tablespoon milk (If you want to skip egg, use an additional 1/4 cup milk)
3 tablespoon honey, or any sweetener of your choice
1 tablespoon oil
1 granny smith apple, chopped (or any other apple)
Powdered sugar to sprinkle (optional)
Steps
Preheat the oven to 375F (190C).
In a bowl stir together flour, baking powder, ground cinnamon and salt.
Add egg, milk, honey and oil. Mix well until a thick paste is formed.
Gently fold in chopped apples.
Scoop/spoon into a baking sheet lined with parchment paper (or greased).
Bake for 15-20 minutes until golden brown and cooked through.
Serve immediately with an optional sprinkle of powdered sugar.
Homemade Hot Pockets
Dough
4 cups flour
1.5 tsp salt
1.5 TBS yeast
3 TBS oil
1.5 cups warm water for yeast
1 TBS sugar for yeast
.75 tsp salt

Pepperonis, mozz, pizza sauce
Ham and cheese
Chicken, broccoli, cheese
Ham, corn, mayo (it’s a japanese thing, look it up!)
Thanksgiving turkey, stuffing,...?
Breakfast stuff like sausage, egg, cheeze.
Hot dog stuff: hot dog, pork n beans, relish, cheese, ketchup, mustard
Vegetarian Fillings
4 cheese. Maybe with garlic and onion?
Broccoli and cheese
Broccoli, cauliflower and cheese.
Egg, cheese, bell pepper, tomato, mushroom
Spinach and cheese. Make sure the spinach is dried!
Soup veggies: peas, corn, carrots, green beans. A pot pie!
Directions
Add yeast, water, and sugar to a bowl. Let proof 5 mins.
Add the remaining dough ingredients to the bowl. Mix.
Knead dough until smooth and elastic. Add more flour or water as needed.
Grease a bowl, place dough in bowl, cover. Let rise for apx an hour.
What about with a pretzel crust??? The hard part is the baking soda bath done right before baking...
Boil the folded and prepped hot pocket? This works! Boil for 15 seconds.
How about brushing the folded and prepped pockets with the boiling baking soda? Works too but not very reminiscent of a pretzel.
Bake at 425 for 15 mins.
Used my basic recipe split in half. Made 8 pockets. They fluffed up a lot so filling to bread ratio was not ideal.

1 75g package of frozen chopped spinach
1/2 breadcrumbs
2 large beaten eggs
1/2 cup diced onion
1 large clove of garlic
1/2 T herb blend (I used greek, try any herb blend!)
Optional: 1/2 cup shredded cheese
Thaw and drain spinach.
Combine all ingredients in a bowl.
Adjust flour and egg amount to get a consistency that can be formed into patties.
Bake patties in a 350 degree oven, turning after 10 mins and cooking further 5 mins or until done.
Alternatively can pan-fry/saute them in a pan with some cooking spray.

Butter or spray a muffin tin

Mix wet ingredients into dry. Do not overmix! Lumps are fine!
Add toppings into batter. Mix.
Fill muffin tin to the top.
Bake 20-25 or until toothpick comes out clean.
Banana Bread

Ingredients
1 cup sugar
1/2 cup (one stick) butter
2 eggs
1 tsp baking soda
3 ripe bananas
2 cups flour
Optional salt sprinkle
Steps
Preheat oven to 350. Prep pan with oil.
Cream together butter and sugar
Add eggs, baking soda, and banana. Mix well.
Add flour and salt. Mix well.
Pour batter into pan(s)
Bake apx 1 hour or until toothpick comes out comes clean.
Let cook before slicing.
Banana Muffins
1-1/2 cups all-purpose flour
3/4 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
3 medium ripe bananas
1 large egg, room temperature
1/3 cup vegetable oil
1 teaspoon vanilla extract
Optional: 1 cup chopped peanuts, pecans, walnuts, choco chips...
Directions:
Mash bananas
Add wet ingredients to bananas. Mix. (1 lrg egg, 1/3 cup oil, 1 tsp vanilla)
Add dry ingredients. Mix. (1.5 cup flour, 3/4 cup sugar, 1 tsp baking SODA, 1/2 tsp salt)
Fill muffin tin sections about halfway.
Bake 375 for 15-20 mins until toothpick comes out clean.

Apple Chips - Thin and crispy Apple Chips made in the microwave!
Microwaved too!?
Prep apple. Cut off ends. Core if desired.
Use mandolin or sharp knife to cut into thin slices
Now would be when most people add seasonings like cinnamon sugar or lemon juice
Arrange in a single layer on plate with parchment paper.
Microwave 4-5 mins or until edges start curling
Flip. Microwave 30-60 seconds until edges are crispy.
Let cool 10 mins. This also makes them crisp up.
Enjoy!
Homemade Baked Banana Chips - Deliciously sweet and guilt-free baked banana chips are so easy to make and are the perfect portable, healthy snack to have on hand.
Super easy!
Preheat oven to 200 degrees.
Set up baking sheets with parchment or foil + cooking spray
Cut up bananas
Apply lemon juice. Either toss in bowl or drizzle/brush on top
Make sure none of the pieces are touching on the tray!
Bake for 2 hours.
Flip. Bake for 2 more hours.
Let cool completely on cooling racks. The longer, the crunchier!
Probably fun to do in the winter to heat up the house!

6 slices thick-cut bacon
SEASONED FLOUR:
2 cups all purpose flour
3 Tbsp paprika
1 1/2 Tbsp kosher salt
1 1/2 Tbsp dry mustard
1 1/2 Tbsp garlic powder
1 1/2 Tbsp onion powder
1 Tbsp seasoned salt
3/4 Tbsp black pepper
1/2 Tbsp celery seed
1/2 tsp dried ginger
1/2 tsp dried thyme
1/2 tsp dried basil
1/2 tsp dried oregano
FRIED CHICKEN:
1 lb chicken tenders trimmed of any excess fat
2 cups buttermilk (Or milk + vinegar, or milk + lemon juice)
HONEY PEPPER SAUCE:
3/4 cup honey
1/4 cup brown sugar
1/4 cup pineapple juice
3 Tbsp soy sauce
Juice of 1 lemon
4 Tbsp apple cider vinegar
1 tsp black pepper
1/4 tsp cayenne pepper or less, to taste
Optional red pepper flakes to taste
4 CHEESE SAUCE AND PASTA:
1/2 stick butter (4 Tbsp)
3 cloves garlic minced
1 Anaheim pepper diced (can substitute with jalapeno or poblano)
3 Tbsp all purpose flour
2 cups heavy cream
1/2 cup grated Parmesan cheese
3/4 cup shredded Mozzarella cheese
1/2 cup shredded Romano cheese
1/2 cup shredded Asiago cheese
1/4 tsp dried basil
Black pepper to taste
Fresh parsley for garnish
1 box dried cavatappi pasta (or other short cut pasta) (1 lb)
Directions
BACON:
Cook bacon in your preferred method, and set aside to cool.
SEASONED FLOUR:
Combine in a big bowl for breading later.
HONEY PEPPER SAUCE:
Add all ingredients to a saucepan and bring to a boil. Reduce heat to LOW and simmer for 20 minutes, or until thickened slightly. Set aside to cool a bit.
FRIED CHICKEN:
Place chicken tenders in a large bowl and pour buttermilk into bowl. Turn chicken to coat each piece in buttermilk.
Let marinate while you prepare other things.
Add oil to large heavy bottomed pot and heat to 350 degrees F.
Shake excess buttermilk from chicken tender, then drop into seasoned flour.
Shake gently to coat in flour. Repeat with remaining chicken tenders.
Add tenders, 2-3 at a time, to the hot oil and fry for several minutes per side, until dark golden brown and cooked through.
Remove from the oil and place on a wire cooling rack (with paper towels laying underneath to catch the excess grease). Repeat with remaining chicken.
4 CHEESE SAUCE AND PASTA:
While chicken is frying, bring a large pot of salted water to a boil.
Add pasta and cook until al dente (according to package directions).
Drain pasta and drizzle with a bit of olive oil.
While pasta water is coming up to a boil, add butter to a saucepan and melt over MED-LOW heat.
Add garlic and diced pepper to the saucepan and saute for 2 minutes, until softened.
Add in flour and whisk to combine. Mixture will resemble very wet sand.
Pour in heavy cream while whisking, and whisk often for 5 minutes, or until thickened.
Sauce should coat the back of a spoon.
Add in cheeses, one at a time, and stir to melt.
Season with pepper and basil and stir to combine.
Toss cooked pasta with cheese sauce and add to serving bowl.
Toss fried chicken tenders with some of the honey pepper sauce, and place several chicken tenders on top of the mac and cheese.
Sprinkle with crumbled bacon, minced fresh parsley, and an optional drizzle of the honey pepper sauce.
Enjoy!
If you want to minimize dishes and multitasking....
Do chicken first. Bread and bake for ~40mins at 425 degrees.
Make bacon.
Make pasta in large pot. Set aside
In same pot still, make cheese sauce. Add pasta. Set aside.
In same pot, make honey pepper sauce. Set aside.
Toss desired amount of chicken in honey pepper sauce. (If you plan to have leftovers, leave the chicken and sauce separate)
Plate up! Reheat covered in oven if needed.
Planning to omit chicken and use breaded broccoli and cauliflower instead. Maybe combine seasoned flour and buttermilk into a batter or modify this batter and then bread with conventional bread crumbs if this doesn’t work initially.

Chickpeas

Chorizo (or sausage, or chickpeas+paprika, or mexican rice with extra spice! or ground mushroom seasoned appropriately...really a lot of things can sub in)
Cold toppings: sour cream, green onion
Scrub and pierce potatoes.
Rub potatoes with oil.
Wrap in aluminum if you want a soft skin.
Bake 400 degrees for 80 mins. (Put on a movie!)
Hollow out potatoes some. You still want a thick boat! Save insides for a pie or soufflé.
Load up potatoes!
Bake 10-20 more mins until heated.
Top with cold toppings.
