This basic home-made seitan recipe is a versatile and protein-rich meat substitute. Seitan, made from vital wheat gluten, is commonly used in vegan cooking for its meat-like texture and ability to absorb flavors. It can be seasoned and used in various dishes such as stir-fries, stews, or sandwiches.
Ingredients: 1 cup vital wheat gluten. 3/4 cup water or vegetable broth. 2 tablespoons soy sauce. 1 tablespoon nutritional yeast. 1/2 teaspoon garlic powder. 1/2 teaspoon onion powder. 1/2 teaspoon paprika.
Instructions: In a mixing bowl, combine vital wheat gluten, nutritional yeast, garlic powder, onion powder, and paprika. In a separate bowl, mix water or vegetable broth with soy sauce. Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms. Knead the dough for about 5 minutes until it becomes elastic. Let the dough rest for 5 minutes. Divide the dough into smaller pieces or shape it into desired shapes. Bring a pot of water or vegetable broth to a simmer. Place the seitan pieces in the simmering water or broth and cook for 45-60 minutes, keeping the heat low to avoid boiling. Once cooked, remove the seitan from the pot and let it cool before using it in recipes.
