I did a remembrance cake in honor of my brother who passed away 2 years ago due to complications of diabetes. When he was alive, one of his favorite cakes was “Strawberry Shortcake,” but I cannot find a vegan one in my area. I decided to make a raw vegan strawberries cheesecake instead. As long as I taste strawberries, that is good enough for me to connect his memory of why he loved this cake. This cake was also one of my mother’s favorite when I made it for her last year for his 1st remembrance day.
