A tasty and filling loaf that doesn't have any meat in it. Great for Thanksgiving. This loaf is full of healthy beans, wild rice, and tasty spices that everyone will love, vegan or not.
Ingredients: 1 cup cooked wild rice. 1 can black beans, drained and rinsed. 1 onion, finely chopped. 2 cloves garlic, minced. 1 carrot, grated. 1 celery stalk, finely chopped. 1/2 cup breadcrumbs. 1/4 cup ground flaxseed. 1/4 cup nutritional yeast. 1/4 cup tomato paste. 2 tablespoons soy sauce. 1 teaspoon dried thyme. 1 teaspoon dried oregano. 1/2 teaspoon smoked paprika. Salt and pepper, to taste.
Instructions: Preheat the oven to 350F 175C and line a loaf pan with parchment paper. In a large bowl, mash the black beans with a fork or potato masher. Add the cooked wild rice, onion, garlic, carrot, celery, breadcrumbs, ground flaxseed, nutritional yeast, tomato paste, soy sauce, thyme, oregano, smoked paprika, salt, and pepper to the bowl. Mix well to combine. Transfer the mixture to the prepared loaf pan and press it down firmly. Bake for 45-50 minutes, or until the loaf is firm and golden on the outside. Remove from the oven and let it cool for a few minutes before slicing and serving. Enjoy your Thanksgiving meatless loaf!
