My meini. Actually, Claire’s meini. Claire is a woman whose kitchen I worked in for a brief while in Santa Fe, many years ago. Meini are Italian corn muffins. She sold these to a restaurant there as a breakfast item, and I helped her produce them. I talked her into giving me the recipe, which I told her I would never share. So, sorry! But aren’t the pictures pretty? They are even prettier in real life. And yes, they are amazing. Even when it’s late afternoon, and not breakfast.
