Mid-Autumn Festival might be over, but we still have some mooncakes 🥮 stashed away. Here is a baked dessert from Hong Kong MX Mooncakes (香港美心月饼). The Hong Kong MX White Lotus Seed Paste Mooncake with Egg Yolk (美心蛋黄白莲蓉月饼) featured white lotus seed paste surrounding an off centre salted egg yolk. A sign that the yolk is a good one is the seeping of oil from it. This oil is released as the salt breaks down the yolk's structure during the pickling and baking process, and its redistribution over a couple of days results in the pastry becoming soft, moist, and glossy.
This Disney White Lotus Seed Paste with Melon Seeds Mooncake (白莲蓉瓜子月饼) is a gift from my colleague. It is part of Disney Whimsical Wonders Mid-Autumn Gift Set (DISNEY 奇声妙想音乐中秋礼盒) that she shared with me. The inclusion of melon seeds adds crunch factor to the otherwise plain, albeit sweet lotus seed paste mooncake. 🥮
