Strong Deeds, Gentle Words
Jean-Baptiste is already a remarkably gentle person for being so very strong. While he doesn't particularly enjoy being handed something fragile like, say, a vase or glass of something, he would absolutely excel at holding a baby. Babies, children, little hands, and tiny toys -- he would know quickly to temper that innate strength of his in the service of caring for others.
That being said, if someone were to threaten to harm the children? Well, now. That is another matter entirely. Jean would never want to expose such innocent and impressionable kids to the image of someone's jaw being inverted with a punch or being bend 90 degrees in a puddle of their own vomit, of course. That is why he would gently lead whoever it was away from them and begin with words as best he can.
After all, Mother Mercedes would want him to begin with gentle words, to find out what the person was doing before resorting to violence. There is no law stating that the encounter cannot end in strong deeds, particularly if the fellow is being unusually obstinate. The protection of those children is paramount, as is the enforcement of boundary. They will need to learn what will happen should they try this again.
Truthfully, Jean would have an easier time knowing how to talk down a would-be assailant or thief with the example of Byleth and Mercedes to guide him than by default. Easing the trouble of others, finding the root of the problem, and helping to solve it with a minimal damage dealt as possible -- that would be honouring their years of impressing upon him the necessity of being a good man.
But...
Some people do, in fact, need to have the worst of themselves beaten out of them. Hopefully, whoever it is that would dare threaten the safety of those adorable little boys and girls will apologize and see the light before they are forced to walk into it. If there is anything JB values the most, it is the smiling faces of those sweet children. Innocence is to be preserved for as long as it can! Being surrounded by children in need of loving families all his life, all while having one himself, would have stoked the desire to be a father one day early in his childhood.
Or at the very least having someone to protect.
Hey, maybe he'll be a teacher at the Officer's Academy one day! A little flock of ducklings to guide and protect would be a dream come true.
