Indulge in the nostalgic flavors of an old-fashioned chocolate meringue pie presented as a delightful parfait. Creamy chocolate filling, flaky pie crust, and a billowy meringue topping create a perfect combination of textures and tastes.
Ingredients: 1 pre-baked pie crust. 1 cup sugar. 1/3 cup cocoa powder. 3 tablespoons cornstarch. 1/4 teaspoon salt. 3 cups whole milk. 4 large egg yolks, beaten. 2 tablespoons unsalted butter. 1 teaspoon vanilla extract. 1 cup heavy cream. 1/4 cup powdered sugar. 1/2 teaspoon vanilla extract.
Instructions: In a saucepan, whisk together sugar, cocoa powder, cornstarch, and salt. Gradually whisk in milk until smooth. Cook over medium heat, stirring constantly until the mixture thickens and boils. Boil and stir for one minute, then remove from heat. In a separate bowl, temper the beaten egg yolks by slowly adding a small amount of the hot chocolate mixture while whisking continuously. Pour the tempered yolks into the saucepan, return to heat, and bring to a gentle boil. Cook and stir for an additional minute. Remove from heat and stir in butter and vanilla extract until smooth. Pour the chocolate filling into the pre-baked pie crust and let it cool to room temperature, then refrigerate until set. In a chilled bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Spread the whipped cream over the chilled chocolate pie filling. Optionally, use a kitchen torch to lightly brown the meringue. Serve the parfait chilled and enjoy!
