Blue and purple gel food coloring. Edible glitter or sprinkles for decoration. Mermaid-themed cupcake liners.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with mermaid-themed cupcake liners. In a bowl, whisk together the flour, baking powder, and salt. Set aside. In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined. Divide the cupcake batter into two equal portions. Add blue gel food coloring to one portion and purple gel food coloring to the other. Mix each until you achieve the desired mermaid colors. Fill each cupcake liner with a spoonful of each colored batter, creating a marbled effect. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Remove the cupcakes from the oven and let them cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
