Had delicious Mexican buñuelos yesterday at El Mexicano in Saratoga Springs. They were flat!

While the boy was at a kiddie birthday party, we had Mexican eats for lunch cuz our lives are so painfully, almost unbelievably glamorous like that. (at Toro Loco)

Much to the delight of my family, including my normally Mexican eats-hating-disliking kid, I made taco quesadillas for dinner tonight. I think what swayed the boy's opinion was the substitution of Ethiopian-spiced lentils for refried beans. I think what swayed busy daddy's opinion was the substitution of low-carb tortillas for regular tortillas.

Busy daddy said the taco quesadillas were super-deloycious! The boy said we should start instituting Ethiopian Taco Quesadillas Wednesdays! I say the taco quesadillas were pretty good!
