This Hot Mexican Corn Dip is a tasty appetizer that's great for parties or getting together with friends on game day. It tastes great because it has corn, cheddar cheese, green chilies, and spices in it.
Ingredients: 1 can 15 ounces whole kernel corn, drained. 1 cup shredded cheddar cheese. 1/2 cup mayonnaise. 1/2 cup sour cream. 1 can 4 ounces diced green chilies, drained. 1/4 cup diced red bell pepper. 1/4 cup diced green onions. 1/4 cup chopped cilantro. 1 teaspoon chili powder. 1/2 teaspoon garlic powder. 1/4 teaspoon ground cumin. Salt and pepper to taste.
Instructions: Preheat oven to 350F 175C. In a large mixing bowl, combine all ingredients until well mixed. Transfer the mixture to a baking dish and spread it out evenly. Bake for 20-25 minutes, or until the dip is hot and bubbly. Remove from the oven and let it cool slightly before serving. Garnish with additional chopped cilantro and green onions if desired. Serve warm with tortilla chips or sliced baguette.
