For a home-cooked Mexican feast, these real chicken tacos with fresh salsa are packed with flavor. When you put soft chicken that has been spiced with herbs and spices inside warm corn tortillas, you have a delicious taco.
Ingredients: 1 lb boneless, skinless chicken breasts, diced. 2 tbsp olive oil. 1 tsp chili powder. 1 tsp ground cumin. 1/2 tsp paprika. Salt and pepper to taste. 8 small corn tortillas. 1 cup diced tomatoes. 1/2 cup diced onion. 1/4 cup chopped cilantro. 1 jalapeno, seeded and diced. 1 lime, juiced. 1 avocado, diced.
Instructions: In a bowl, mix diced chicken with olive oil, chili powder, cumin, paprika, salt, and pepper. Heat a skillet over medium heat and cook the seasoned chicken until browned and cooked through, about 6-8 minutes. In another bowl, combine diced tomatoes, onion, cilantro, jalapeno, lime juice, and diced avocado to make the fresh salsa. Warm the corn tortillas in a dry skillet for about 30 seconds on each side. To assemble the tacos, place a spoonful of cooked chicken onto each tortilla, top with fresh salsa, and serve immediately.
