Ingredients: 2 cups cooked white rice. 1 cup black beans, drained and rinsed. 1 cup corn kernels fresh or frozen. 1 cup diced tomatoes. 1/2 cup diced red bell pepper. 1/2 cup diced green bell pepper. 1/2 cup diced red onion. 1 cup shredded cheddar cheese. 1/2 cup sliced black olives. 1/4 cup chopped fresh cilantro. 1/4 cup sour cream. 1/4 cup salsa. 1 tablespoon vegetable oil. 1 teaspoon ground cumin. 1 teaspoon chili powder. Instructions: Heat the vegetable oil in a big skillet over medium heat. Add the green bell pepper, red bell pepper, and diced onion. Saut them for two to three minutes, or until they begin to soften. To the skillet, add the cooked white rice, ground cumin, chili powder, black beans, corn kernels, and diced tomatoes. Mix thoroughly to blend. Cook the rice for a further five to seven minutes, stirring now and then, until it's thoroughly heated and the ingredients are well combined. Add salt and pepper to taste and season the mixture. Arrange a layer of tortilla chips onto a baking sheet or serving platter. Over the chips, spoon the mixture of Mexican fried rice. Evenly scatter shredded cheddar cheese on top of the rice. After the cheese is melted and bubbling, place the platter or baking sheet under the broiler for two to three minutes.
