These Mexican Cauliflower Steak and Guacamole Sandwiches are a delicious vegan alternative to traditional steak sandwiches. The cauliflower steaks are seasoned with Mexican spices and roasted to perfection, then sandwiched between whole grain buns with creamy guacamole.
Ingredients: 1 large head of cauliflower, cut into thick slices. 2 tablespoons olive oil. 1 teaspoon chili powder. 1/2 teaspoon cumin. 1/2 teaspoon smoked paprika. Salt and pepper to taste. 4 whole grain buns, toasted. 1 avocado, mashed. 1 tablespoon lime juice. 1/4 cup diced red onion. 1/4 cup chopped cilantro. 1/2 cup diced tomato. 1/4 teaspoon garlic powder. 1/4 teaspoon onion powder. 1/4 teaspoon salt. 1/4 teaspoon black pepper.
Instructions: Preheat the oven to 400F 200C and line a baking sheet with parchment paper. In a small bowl, mix olive oil, chili powder, cumin, smoked paprika, salt, and pepper. Brush both sides of cauliflower slices with the spice mixture and place them on the baking sheet. Roast for 25-30 minutes, flipping halfway through, until cauliflower is tender and lightly browned. In a medium bowl, mix mashed avocado, lime juice, red onion, cilantro, tomato, garlic powder, onion powder, salt, and black pepper to make the guacamole. Spread guacamole on the bottom half of each toasted bun. Place a roasted cauliflower steak on top of the guacamole. Top with the other half of the bun and serve immediately.
