This vegetable lentil soup is hearty and healthy. It's full of fiber, protein, and vitamins, so it's a great way to stay warm on cold days. It's also simple to make in the slow cooker!
Ingredients: 1 cup dried lentils. 4 cups vegetable broth. 1 onion, diced. 2 carrots, chopped. 2 celery stalks, chopped. 2 cloves garlic, minced. 1 can 14.5 oz diced tomatoes. 1 teaspoon dried thyme. 1 teaspoon dried oregano. 1/2 teaspoon ground cumin. Salt and pepper to taste. 2 cups fresh spinach leaves.
Instructions: Rinse lentils under cold water and drain. In a slow cooker, combine lentils, vegetable broth, onion, carrots, celery, garlic, diced tomatoes, thyme, oregano, cumin, salt, and pepper. Cover and cook on low for 6-8 hours or until lentils and vegetables are tender. Stir in fresh spinach leaves during the last 30 minutes of cooking. Taste and adjust seasoning if necessary before serving.
