In the lead up to the Artemis II launch, I saw people asking why we couldn't just skip straight to landing on the moon, since we already did all these tests during the Apollo program.
The smart answer is that it's been 50 years and a lot of the technology that's being used in the Artemis missions didn't even exist during the Apollo program.
The correct answer is apparently that they have to figure out how to fix Outlook in space.
