Now since the lockdown is lifted, I don't have to trek up miles to find an open restaurant, so this place I wouldn't have discovered if not for @singhsavitoj 's magnificent food walk for @delhifoodwalks . The Parat Kulcha at Sharma Chat Shop which has been in existence since 1937 is a good example of the food culture the Punjabis have brought to Shimla. So what makes Parat Kulcha special is that the leavened bread is cooked or soaked in the chickpea curry ( chhole) as you can see the pic. This is called Geela ( Wet ) Kulcha in Punjab as mentioned by @anubhavsapra in the video. The kulcha puffs up and is then topped with yogurt , a sweet chutney, yogurt , ginger & radish julienne . I also quite liked the raw Mango pickle which had a nice lacto fermented flavor which nicely balances of with the onion garlic based curry.
