This year's Midsummer treat: Thumbprint cookies flavored with rosemary and filled with apricot preserves. These are absolutely delicious (yes, I already ate one). The buttery shortbread cookies crumble away in your mouth. The rosemary in them adds wonderfully earthy, piney notes that are perfectly complimented by the sweetness of the apricots. Its magical properties are all about encouraging healthy relationships. Apricots promote love and have been used for centuries in magic and in the kitchen for intimacy and affairs of the heart. Rosemary, meanwhile, promotes clarification, purification, and memory." --Brogan Wu 2 sticks of butter, softened 3/4 cup sugar 1 t. vanilla 2 cups all-purpose flour 1-2 t. fresh or dried rosemary, to taste (I used 1 1/2 t. dried) Apricot preserves Cream the butter and sugar together. Stir in the vanilla. Add the flour and mix until the dough just starts to come together. Fold in the rosemary so it’s evenly incorporated into the dough. Flatten the dough into a disc, wrap it tightly in foil or plastic wrap, and chill for at least an hour. Preheat the oven to 350°F. Cut the dough evenly into cubes. Roll each cube into a little ball and press it out flat onto a cookie sheet. Using your thumb, make a little round depression in the center of each cookie. Fill each cookie with a generous 1/2 t. of apricot preserves. Bake the cookies for 12-17 minutes, or until a light golden brown.
