Papa's Pancit! 💯 Pancit is basically a stir fried noodles with veggies and choices of meat! This stir fried noodles has 2 types of noodles in it. The Bihon which is rice noodles and Canton also known as flour stick noodles. The Pancit also has pork, chicken liver, squid balls, some vegetables like cabbage, green beans, and carrots. Drizzled with soy sauce and some oister sauce (optional) Perfectly served with squeezed Calamansi. This dish definitely has chinese influence in it that makes the Filipino food more diverse. Just imagine the whole horizon of flavors that you can taste in Filipino cuisine from Malay, Chinese, Spanish, and American flavors. KAMAYAN BOOBDLE FIGHT!!!💯 This is Kamayan or also known as Boodle Fight. It's a way of serving food to be eaten by a group of people using their hands and banana leaves! Some say that this way of serving food is from the Armed Forces of the Philippines. What they do during their deployment in the jungle is that they put all their food together on a huge banana leaf and just eat there with the troops. Although there are evidences that it is being practiced way before Ferdinand Magellan (a Portuguese explorer who organized the Spanish expedition to the East Indies from 1519 to 1522) reached the Visayas region. Indonesia and Malaysia are also practicing this way of communal eating. In this case we had grilled Liempo (pork belly), fried Tilapia, fried Bangus (milkfish), salted egg, Ensaladang Talong (Eggplant salad with shrimp paste), grilled okra, grilled tomatoes, Tahong (mussels), Buttered shrimp, mangoes, turnips, and watermelon. Pork Caldereta and Igado! Two of my most favorite Filipino dishes! 🍻🍽️💯 Caldereta is basically a tomato based stew just like Swiss steak stew. The only difference is that Caldereta has liver spread. Igado is a Filipino spiced pork liver dish originating from the Ilocos Region in the Northern provinces of the Philippines. In this case, my dad used pork meat, isaw (pork intestine), and ruffled fat.
