The kids will love these pancakes that don't have milk in them. They taste great and don't have any dairy. They're fluffy and light, and they're great for breakfast or brunch.
Ingredients: 1 cup all-purpose flour. 2 tablespoons sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 cup water. 2 tablespoons vegetable oil. 1 teaspoon vanilla extract.
Instructions: In a mixing bowl, combine the all-purpose flour, sugar, baking powder, baking soda, and salt. Add the water, vegetable oil, and vanilla extract to the dry ingredients. Mix until the batter is smooth. Preheat a non-stick griddle or frying pan over medium-high heat. Pour approximately 1/4 cup of the pancake batter onto the hot griddle for each pancake. Cook until bubbles form on the surface of the pancakes and the edges begin to set, usually 2-3 minutes. Flip the pancakes with a spatula and cook for an additional 1-2 minutes, or until they are golden brown and cooked through. Remove the pancakes from the griddle and keep warm. Repeat the process with the remaining batter. Serve your no milk pancakes with your favorite toppings, such as maple syrup, fresh fruit, or powdered sugar.
