Aunties do Taste In Memory, Mt Albert. And after ordering and devouring 11 dishes from the menu, they all gave Taste In Memory the thumbs up. Just when you thought they were all satiated, they order 3 dessert dishes. Together with the Xiao Long Bao, the 3 desserts were the greatest hits. Aunties had: • xiao long bao • millet cakes • meat wrapped with pressed tofu in chicken juice # fried tofu in vermicelli )gluten-free) • quick fried flour coated spare ribs • green vegetable in chicken consomme • ji tsai pork wonton • shie tsai rou si imam ( noodles with shredded pork & preserved vegetable. The trio of satisfying desserts, all served warm: • lily and mungbean congee • sweet osmanthus congee with brown sugar • red dates, lotus seed and white fungus congee. Millet cake bateroot & carrots

Millet Cake salata Bateroot & Carrots gluten free Torta salata di Miglio e Rape & carote senza glutine

Preparazione 20 minuti cottura miglio e carote

Cottura in forno 40 minuti a 200 gradi

Teglia diametro 20 cm circa con carta forno

 INGREDIENTI:

130 gr di  Miglio

290 gr di acqua fredda

1 piccola barbabietola rossa affettata

2 carote  medio grandi lavate e dadolate

2 piccoli scalogni dadolati

4 pomodorini secchi

1 foglia di alloro (opzionale)

Pizzico di curcuma

1 c di coriandolo in grani (opzionale)

Rosmarino e salvia tritati

2 C di Acidulato di Umeboshi (o pizzico di sale in alternativa)

Olio EVO per  presentare il piatto

Anacardi per guarnire

 Preparo:

Cuocio il miglio in una padella con l'acqua fredda partendo al fuoco minimo.

Aggiungo i pomodorini secchi, lo scalogno, la foglia di alloro il coriandolo. 

Mentre cuoce, ad acqua quasi assorbita (ne ho aggiunta un poco più rispetto alla dose normale) aggiungo le carote dadolate, il curcuma e proseguo fino a completo assorbimento dell'acqua.

Taglio a pezzetti i pomodorini secchi che ora saranno ben cotti e facili da tagliare e rimetto nel miglio cotto.

Aggiungo l'acidulato di Umeboshi, regolatore di sapidità e tolgo la foglia di alloro.

Nella teglia con carta forno e oliata ai bordi distribuisco bene la barbabietola a fette.

Trasferisco il miglio nella teglia, livello bene il composto sopra la barbabietola.  

Inforno per 40 minuti circa a 200 gradi finché sarà ben dorato il cake.

Sfornando, aggiungo 2 C di Olio EVO e gli aromi come il rosmarino e salvia.

Guarnisco con delle arachidi per dare croccantezza.

Avrà una consistenza ben compatta e si potrà mangiare sia tiepida che fredda a temperatura ambiente.
