Some of this weeks Mindful Chef meals. So delicious. The smokey black beans (picture 3)and apple pork burgers (picture 1) definitely amongst my favourites (albeit the pork burgers got a bit burned woops!) no complaints at all this week. Each and every one was delicious and ~600cals with no gluten or dairy, and a good carb:protein:fat ratio. Feeling quite good this week even if my fitness is making me feel down. I’ll keep plugging away though.
I’ve been watching Haikyuu!! Lately, which is a vollyball anime. (Not the kind with scantily clad ladies I may add...) and I really love how the characters keep pushing forwards. They fail and keep trying. It’s quite inspiring. It’s made me want to work harder.

This weeks meals were all a little bland, though still good! The Thai red curry (image 3) was the best but there was too much courgetti which perhaps diluted the flavour a bit. Still, very positive all around.
This weeks food from Mindful Chef. Not a single bad dish amongst them! I particularly liked the soy glazed minced beef (image 4) would eat all again!
Another week some more outstanding Mindful Chef meals. I am particularly fond of the chargrilled jerk chicken and sweetcorn (picture 1). All meals are ~600 caps with well balanced macros. We have one of these meals a day, two meals of Huel ~300 cals each and a small desert usually around ~200 cals.
I keep starting a new routine and lose momentum before it does any good. I struggle to stay motivated when there is nothing to life but work and sleep right now.
I’ve been gluten free for a few weeks now. Cutting it out definitely helped this morning. I don’t have stomach and back ache all the time and I actually have energy in the mornings. Once I fall off the gluten free wagon and find I crave it and struggle get back on again. This is probably been my longest streak since lock down began. We’ve had some seriously bad blips during this pandemic. But this morning I actually woke up feeling pain free and rested, which made getting up to workout easier. I just have to keep up with the routine!!
Another week and some more fab meals. It’s been super hot so we haven’t cooked some days and instead resorted to gluten free pittas and veg with home made guacamole and hummous. We also combined cold meat, apricot jam and goats cheese which was surprisingly nice albeit gave me tummy ache. I feel this week I maybe indulged in a few too many ice creams which again messed up my stomach a bit. It’s been far too hot to exercise even!
