This Korean-inspired stir-fry is savory and spicy, with vibrant vegetables, tender chicken, and a delicious miso-based sauce. Ideal for an easy and filling weeknight dinner!
Ingredients: 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces. 2 tablespoons miso paste. 2 tablespoons gochujang Korean red pepper paste. 2 tablespoons soy sauce. 1 tablespoon rice vinegar. 1 tablespoon honey. 1 teaspoon sesame oil. 2 cloves garlic, minced. 1 teaspoon grated ginger. 1 red bell pepper, thinly sliced. 1 green bell pepper, thinly sliced. 1 onion, thinly sliced. 2 cups broccoli florets. 2 tablespoons vegetable oil. Cooked rice, for serving. Sesame seeds and chopped green onions, for garnish.
Instructions: In a bowl, mix miso paste, gochujang, soy sauce, rice vinegar, honey, sesame oil, garlic, and grated ginger to create the marinade. Place chicken pieces in a Ziploc bag or a bowl, and pour half of the marinade over them. Seal the bag or cover the bowl and refrigerate for at least 30 minutes. Heat vegetable oil in a large skillet or wok over high heat. Add the marinated chicken and stir-fry for 5-6 minutes or until cooked through. Remove chicken from the skillet and set it aside. In the same skillet, add a bit more oil if needed, and then add the sliced onion, bell peppers, and broccoli florets. Stir-fry for 4-5 minutes until they start to become tender but still crisp. Return the cooked chicken to the skillet with the vegetables. Pour the remaining marinade over everything in the skillet and stir-fry for an additional 2-3 minutes to combine flavors and heat everything through. Serve the spicy Korean miso chicken stir-fry over cooked rice. Garnish with sesame seeds and chopped green onions. Enjoy your delicious and spicy Korean miso chicken stir-fry!
