Ingredients: 4 fish fillets such as sea bass or halibut. Salt and pepper to taste. 2 tablespoons olive oil. 1 cucumber, peeled and chopped. 2 green bell peppers, chopped. 1 jalapeno pepper, seeded and chopped. 2 cloves garlic, minced. 1 cup fresh cilantro leaves. 1/4 cup fresh parsley leaves. 1/4 cup fresh basil leaves. 1/4 cup white wine vinegar. 1/4 cup extra virgin olive oil. 1/2 cup cold water. 1 lime, juiced. 1 avocado, diced for garnish. Fresh cilantro leaves for garnish.
Instructions: On both sides, season the fish fillets with salt and pepper. In a pan, heat the olive oil over medium-high heat. Sear the fish fillets for three to four minutes on each side, or until they turn golden brown. Take it out of the pan and set it aside. Chopped cucumber, green bell pepper, jalapeno pepper, garlic, cilantro, parsley, basil, white wine vinegar, extra virgin olive oil, cold water, and lime juice should all be put into a blender. Mix until it's smooth. Add salt and pepper to taste to the gazpacho sauce. To serve, put fish fillets that have been seared on top of green gazpacho sauce and top with diced avocado and fresh cilantro leaves. Have fun!
