Homemade mixed berry yogurt parfaits..delicious!
This Mixed Berry Parfait with Oats is a nutritious and tasty breakfast or dessert. The combination of crunchy oats, creamy Greek yogurt, and fresh berries is the ideal combination of flavors and textures. This recipe is simple to prepare and can be made ahead of time for a quick and filling meal.
Instructions: Preheat the oven to 350 degrees Fahrenheit. Bake the rolled oats in a single layer on a baking sheet for 10-12 minutes, or until lightly golden and fragrant, stirring occasionally. Place aside to cool. Whisk together the Greek yogurt, honey, and vanilla extract in a small bowl until smooth and well combined. Separately, combine the chopped strawberries, blueberries, and raspberries. Begin by layering a layer of the oat mixture in the bottom of each serving glass. Then, add a layer of mixed berries. Serve with a dollop of the yogurt mixture on top. Repeat the layers until the glass is full, finishing with a layer of berries. Before serving, place the parfaits in the refrigerator for at least 30 minutes.
