second leftovers of the day
about a month ago I made a big batch of soya chilli that was just way too spicy so I put it in the freezer while I decided what to do with it.....of course it matured and got hotter...duh
so yesterday I took a batch out and use it as a ‘starter’ for a new batch, to this I added only soya mince (about 250g, the same as the ‘starter’ amount) and topped up with chopped tomatoes until the consistency was what I wanted, tasted and it was still a wee bit hot so I added about 150ml of soya cream which not only takes the edge of the heat but also gives it a beautiful texture.
Heated a serving today adding soya cheese in with the pot to melt it through the chilli, because it’s coconut based it doesn’t melt the same as regular cheese putting it on top of hot food doesn’t get the desired effect (^^^^ as you can see by the little extra I added)
