Ingredients: 4 large egg yolks. 1/2 cup granulated sugar. 1/2 cup Moscato wine. 1 cup white chocolate, finely chopped. 2 cups heavy cream. 1 teaspoon vanilla extract. 1 cup fresh berries for garnish.
Instructions: Whisk the egg yolks and sugar together in a bowl that can handle heat until they are well blended. In a double boiler, put the bowl over a pot of simmering water and slowly whisk in the Moscato wine. Keep whisking the mixture until it gets pale and thick, like a sabayon. It takes 8 to 10 minutes at most. Turn off the heat and add the chopped white chocolate. Mix the chocolate in until it's smooth. Let it get cool enough to touch. Whip the heavy cream in a different bowl until stiff peaks form. Fold the whipped cream into the sabayon mixture slowly until it is well mixed. Fold in the vanilla extract and keep folding until the base of the parfait is light and fluffy. Place the mixture in bowls or glasses for serving and top with fresh berries. Put the parfaits in the fridge for at least two hours to set. If you want, you can add more berries and a drizzle of Moscato wine to the top before serving.
