I love your Making Peace AU and really admire your artstyle :D It’s so detailed and colorful and pleasing to look at! Do you have any more stories or concepts of the Mad Dogs after they move into the farmhouse? I imagine once Leo feels better he’s quite the mischief-maker on a big farm like that XD Also Donnie might run into some problems trying to renovate everything (not to mention a lack of WiFi) XD

I really wanted to answer this with a full story, but I just don't have any prepared or close to being done, so for now I'll just give you some general concepts about the Mad Dogs farm life I like to think about:
I think that they would spend A LOT of time out in the sunshine. Like, back when they lived in the city, they mostly stuck to the sewers and only went out on patrol at night usually. But now, with mutants and yokai being recognized as citizens, the Hamatos can be out in public without hiding their faces (not that they ever did a GREAT job of that before haha). And at their farm property, I like to imagine they spend a lot of time outside, working the gardens, tending the livestock, playing sports, and just sunning themselves.
I imagined they would have a pool, and they would swim in it a lot during the summer, but also I think they'd just lie in the deck chairs and directly on the concrete around the pool to soak up those rays. Rays they probably only mostly got from lamps and artificial sunlight before.
I like to think Leo is an early riser and likes to go on jogs down the country highway in the morning, as the sun is coming up. Raph would also join him, at least at the beginning of the run, but at some point, since Raph is so much bigger, Leo would probably fall behind at his own pace and Raph would pull ahead. They both run for the same amount of time, but Raph can cover WAY more ground. I don't think either of them mind, they just like to at least START the run together, and then they're perfectly content to spend the rest of it apart in peaceful solitude.
I like to think Donnie spends COPIUS amounts of time in his greenhouse, maybe even more so than his workshop. I like to think Raph has a plethora of creative hobbies, from knitting to crocheting to whittling to carpentry (mostly birdhouses) to basket-weaving to sewing to macramé (lots of plant-hangers for Donnie). I think Mikey would also keep busy with arts and crafts, painting and pottery and sketching. And Raph and Mikey would probably be the two to spend the most amount of time with any of the animals on the farm.
In terms of what you brought up, I think that Leo would be a mischief-maker even BEFORE he's fully healed lol. While everyone else is busy renovating the house and property, he'd probably be sitting in a chair like it's a throne and being an absolute DIVA, bossing people around and giving them unsolicited advice on how they should maybe move that plank of wood a liiittle to the left.
(No one listens to his instructions ofc, and he doesn't expect them to, but everyone knows he's just bored, so they play along in mock-irritation)
And he'd definitely be doing all sorts of pranks. I'm not a very devious person myself, so it's hard for me to think of something Leo would pull, but maybe when his brothers go off to the city to fight crime while he's left behind at the house to heal, he'd make his way around the house and property (carfeully ofc) and hide a bunch of mini plastic figurines everywhere. I have a few friends who have done it while they were house-sitting for someone (they called it 'ducking' the house, cuz they used little plastic ducks haha), or with green army men all over their highschool as a Senior prank. I did this once to one of my brothers and put aliens all over his bedroom while he was away for a while :)
Imagine Donnie and Mikey and Raph over the next few weeks, months even, finding more and more of little guys like these in the weirdest spots:
In the bathroom cabinet, coffee cupboards, tv console, on top of doorframes, behind books in bookshelves, in dresser drawers, in the back of the fridge, the barn rafters, buried in plushie piles. Hundreds in hundreds of different hiding spots. For eons, Mikey, Raph and Donnie just. Keep. Finding them. XD
When it comes to Donnie renovating, I think it would be quite a challenge, partly because of how run down the property and house are and partly because he has just SO many plans. But he would relish the challenge. I also think he'd have more than plenty of resources, both from humans and yokai providing materials and finances in gratitude for the Mad Dogs efforts during the war...
And also just from his own bank account.
We're shown in Repo Mantis that despite Donnie only APPARENTLY having dimes, nickels and pennies, he SOMEHOW gets the resources to COMPLETELY renovate Todd's puppy home. (The joke is not lost on me; like, if he had the finances to build all that, why didn't he just offer that to Repo for the moon buggy in the first place? XD)
AND also the "yeah, yeah, yeah we are poor as dirt," line in Mutant Menace as he's thumbing through his fat stack of dolla dolla bills 💀
And I think you're right that he would NOT be having a good time without his precious WiFi. So the first thing he'd build is a cell and WiFi tower lol.

Do the brothers still visit NYC after the war, even after settling into their new home?
Yes! I had actually considered this factor when deciding they would live out in the country.
I had imagined that shortly after the dust settles from remodeling and everyone is finally all well and more mentally and physically healed, Donnie, with the help of Mikey, Leo and probably some other magic-techs from the Hidden city, would make a portal device. It would be like a giant gate, and act similarly to the passageways leading into the Hidden City, only this one would have more than one location programmed into it, and all of them would lead to places in New York City.
But why can't they just use Leo’s portals? Well, during the war, Leo all but lost his ability to portal. He doesn’t regain it fully until years after the war ends. Plus, with this device, anyone can open a portal to the city without having to bother Leo about it every time.
And they visit the city often. Just because the city is at peace between Humans, Mutants and Yokai doesn’t mean crime doesn’t stop. And the brothers aren’t ‘retired’ yet, either. Far from it. So they still visit NYC often to fight the bad guys (though after everything they’ve been through and how they’ve developed as a team, most criminals feel more two-bit and easy to take down without breaking a sweat). Sometimes they go to attend city council meetings to further help in the seamless transition of Mutant and Yokai citizens into New York. Other times, they go to visit April or hit up their favorite pizza joints. Sometimes they even use it to bring people TO them to visit.
The portal device/gate would probably look similar to the portal generator from 1987 tmnt, except bigger and rounder and more Donnie-esque.

Yes, I want to see Casey Junior in my style too! After that last ask, I've been thinking way more on how I'd design CJ's future version! I have a couple of ideas already, a lot to do with his general features, like how his face is going to be shaped and how long or short his hair will be. I'm also thinking about the aspects to include in his outfit, and I've come up with 3 so far, just as a baseline: his color scheme in the movie, Casey Jones Classic from other TMNT iterations, and influences from Cassandra.
