This is a really tough question, because I rarely play games, and I've never really interacted with them in a "comfort game" way. But after much deliberation, I think I'm gonna have to go with MudRunner.
MudRunner is a pretty cut-and-dry struggle-sim: contend with thick mud and constant bog-downs as you spend hours dragging your log-laden truck across the map. Not only is that slow trudge a satisfying endurance test by itself, but there's also exploration, rock-crawling, and mundane-immersion —I absolutely love driving around the maps in an A-968M (the normal car), imagining myself as an unremarkable participant in the world!!!
I also think there's a sort of aesthetic appeal to playing the game with the "worst" vehicles. Once you gain familiarity, you realize that it's not really that much harder, just different, and at times slower. I'm oft to play under a self-imposed hardcore 1-star 1-truck challenge because I think the image of a B-130 or C-256 conquering maps on its own is kinda inspiring.
It's also such a small, lightweight, cheap, well-polished game for the amount of content you get; plus 100% completion is rewarding without being annoying. I love mudrunner

What I find annoying about Snowrunner is that you have to unload cargo off a trailer or bed. You can't just drag the cargo up the mountain or stack it on top of the truck cab like walking with something on your head. Creativity stifled🚫
