if my opponent makes me draw 5 cards and i have shenanigans in my graveyard, can the dredge make me skip the entire draw 5 or just 1 of them?

Each dredge card in your graveyard can only replace one card draw, so you would need five dredge cards in your graveyard to fully replace the draw effect. Note that each dredge resolves one at a time, so dredging one card can put another dredge card in your graveyard and allow you to continue dredging.

Dredge Question: If I cast Harmonize and have a Darkblast in my graveyard, can I replace all three draws with Dredge 3 from Darkblast if I cast that single copy in between each instance of draw/dredge?

No.

You don’t have priority in the middle of Harmonize resolving. You can dredge the Darkblast, then dredge any dredge cards dumped into your yard by the Darkblast dredge, etc. though.
