She doesn't just collect things, she catalogues them. In her room in the palace, Ariel had several lists detailing her collection in the grotto, not only listing each object but including brief descriptions and snippets of description as to each object's function (or whatever Scuttle told her, or she guessed for herself.)

After going up to the land, Ariel has taken to keeping journals in the same way, writing down every little new thing she collects but also every interesting thing she finds that she can't keep.

She's also taken to revising whatever information from Scuttle she finds out was... less than accurate.

Her main verse is canon-divergent, in which she managed to convince Triton to allow her some time to see the world above. So she's traveling the land, learning all about humans, collecting trinkets, seeing what the world above the waves has to offer.

She may or may not have a time limit, though. And some very strict rules about not trusting humans.
