A delicious vegan and gluten-free twist on classic lasagna, featuring flavorful mushrooms, creamy coconut milk, and nutritious spinach. This dish is perfect for anyone looking for a hearty and satisfying meal without sacrificing taste or dietary preferences.
Ingredients: 9 gluten-free lasagna noodles. 1 tablespoon olive oil. 1 onion, diced. 3 cloves garlic, minced. 16 ounces mushrooms, sliced. 1 teaspoon dried thyme. 1 teaspoon dried oregano. Salt and pepper to taste. 1 14-ounce can crushed tomatoes. 1 14-ounce can coconut milk. 3 tablespoons nutritional yeast. 3 cups spinach. 2 cups vegan cheese, shredded.
Instructions: Before you start cooking, heat the oven to 375F 190C. As directed on the package, cook the lasagna noodles. Once done, drain them and set them aside. Warm up the olive oil in a big pan over medium-low heat. Put in the minced garlic and diced onion and saut until the onion is soft. Sprinkle dried oregano and thyme on top, along with salt and pepper. Keep cooking until the mushrooms are soft. Add the nutritional yeast, coconut milk, and crushed tomatoes and mix them in. Let it cook for 5 minutes. Put spinach in the pan and cook it until it wilts. Take it off the heat. Pour a little bit of the mushroom sauce into a 9x13-inch baking dish. Add more mushroom sauce and vegan cheese on top of the cooked lasagna noodles. Repeat steps 1-3 until all the ingredients are used up. Add a layer of vegan cheese on top to finish. Put foil over the baking dish and bake for 30 minutes. Take off the foil and bake for another 10 minutes, or until the cheese melts and starts to bubble. Let it cool down a bit before you serve. Have fun!

Salt and pepper to taste. 2 cups vegan ricotta cheese. 1 cup vegan mozzarella cheese, shredded.

Layer 3 lasagna noodles over the sauce. Spread half of the vegan ricotta cheese over the noodles. Pour half of the remaining mushroom-tomato sauce over the ricotta layer. Repeat the layers with the remaining noodles, ricotta cheese, and sauce. Top with shredded vegan mozzarella cheese. Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly. Let it cool for a few minutes before slicing and serving.
