Ingredients: 6 large portobello mushrooms. 4 medium potatoes, peeled and diced. 1/4 cup almond milk. 2 tablespoons vegan butter. 1/2 cup chopped spinach. 1/4 cup diced onion. 2 cloves garlic, minced. Salt and pepper to taste. 1 tablespoon olive oil.
Instructions: Preheat the oven to 375F 190C. Remove the stems from the mushrooms and set aside. Place the mushroom caps on a baking sheet lined with parchment paper, gill side up. In a pot, boil the diced potatoes until fork-tender. Drain and mash the potatoes with almond milk, vegan butter, salt, and pepper to taste. In a skillet, heat olive oil over medium heat. Add onions and garlic, saut until fragrant. Add chopped spinach to the skillet and cook until wilted. Mix the sauted vegetables into the mashed potatoes. Stuff each mushroom cap with the mashed potato mixture, filling it generously. Bake in the preheated oven for 20-25 minutes or until the mushrooms are tender. Serve hot and enjoy!
