Ingredients: 3 lbs beef roast. 3 tablespoons Dijon mustard. 2 tablespoons cracked black pepper. 2 cloves garlic, minced. 2 tablespoons olive oil. Salt to taste.
Instructions: Before you start cooking, heat the oven to 375F 190C. Add the cracked black pepper, minced garlic, and olive oil to a small bowl. Mix the ingredients together until you get a paste. Spread the mustard mixture out on the beef roast so that it is covered all over. Add salt to the roast as needed. Toast the roast and then put it on a baking or roasting pan. For medium-rare doneness, roast in a preheated oven for about 30 minutes per pound. You can change the cooking time to get the level of doneness you want. When the roast is done the way you like it, take it out of the oven and let it rest for 10 to 15 minutes before cutting it. Cut the roast into thin slices across the grain and serve hot.
