Mutton Haleem is a rich, slow-cooked stew that blends tender mutton, broken wheat, lentils, and aromatic spices. Originating from the Middle East and popularized in South Asia, this dish is a staple during Ramadan and festive occasions.
Ingredients & Preparation
To make Mutton Haleem, you’ll need:
500g mutton (bone-in for extra flavor)
1 cup broken wheat (dalia)
½ cup mixed lentils (masoor, chana, moong dal)
Onions, ginger-garlic paste, green chilies
Spices: Cumin, coriander, turmeric, garam masala
Ghee or oil for cooking
Cooking Method
Boil mutton with spices until tender. Shred the meat.
Cook broken wheat and lentils separately until soft.
Blend the wheat-lentil mixture into a smooth paste.
Combine with shredded mutton and simmer on low heat, stirring continuously.
Garnish with fried onions, mint, coriander, and a squeeze of lemon.

Ingredients
1/2 kg mutton
3 num 3 deep fried chopped onions
100 gms curd
2 tbsp chilli powder
1 tbsp salt
1/2 tbsp turmeric powder
1/4 tbsp garam masala powder
1/4 cup mint leaves
1/4 cup coriander leaves
1 tbsp lemon juice
2 tbsp ginger garlic paste
2 tbsp green chillies
1 tbsp red gram
1 tbsp bengal gram
1 tbsp green gram
1 tbsp barley seeds
6 Num cashew nuts
6 Num Almonds
1 tbsp basmathi rice
Recipe Notes
Firstly, we'll be cooking mutton, then we'll cook lentils Here I used 1/2 kg mutton. We will also need brown onions Brown onions are 3 deep fried chopped onions This mutton can be directly cooked, but here I'm marinating it a little bit Since, usually, this mutton is cooked for 2-3 hours outside and here we'll be cooking it a bit quicker. To 1/2 kg mutton, add 100 grams curd, 2 teaspoons chilli powder, 1 teaspoon salt, 1/2 teaspoon turmeric powder, 1/4 teaspoon garam masala powder, 1/4 cup mint leaves, 1/4 cup coriander leaves, 1 tablespoon lemon juice, 2 teaspoons ginger garlic paste, 2 green chillies and mix Now add 1/4 brown onions and mix
Let it sit for 30 minutes to 1 hour
To a pressure cooker, add 2 tablespoon clarified butter (ghee) and heat it Add 5 cardamom, 2 star anise, 5 cloves, 2 cinnamon stick pieces, 1 teaspoon shahjeera, 1/2 teaspoon tail pepper and fry for a minute Now add the marinated mutton If you're not marinating the mutton, then add mutton directly along with the masala we added during marination Stir and cook the mutton Add 2 glasses of water and close lid Cook on high flame for 1 whistle and then cook on low flame for 30 minutes. This will be upto 10 whistles Mutton needs to be cooked so much that the meat starts separating from the bone
Lets start the second part of the recipe now Here we will need 100 grams broken wheat Some people also use soaked wheat here. To a bowl, add 1 tablespoon red gram, 1 tablespoon bengal gram, 1 tablespoon black gram, 1 tablespoon green gram, 1 tablespoon barley seeds, 1 tablespoon basmathi rice, 5 cashew nuts and 5 almonds Try to add all the lentils, if one of them isn't available, then you can skip it Now, coarsely grind these lentils Heat 1 tablespoon clarified butter (ghee), 100 grams broken wheat, prepared lentils mixture and cook on medium flame for 3-4 minutes Add 1 litre water and boil on high flame As the water gets to boiling, cook on medium flame Stir and cook so that the base doesn't burn Add some more water if necessary Cook till the lentils become soft and cut off the stove
We can see that the mutton has cooked now If the mutton is still uncooked for you, cook for some more time till the mutton becomes completely soft There's oil-water mixture floating on the mutton. Put about 1/4 cup of it aside Then, cook till the water boils away Let the mutton cool down
Shift the cooked mutton into a wide pan Remove the bones from the mutton Mash the meat till it becomes completely soft Now, mash the cooked lentils till it becomes a soft paste and then add this to the mashed meat Mash them again till they mix and become completely soft If the mixture seems too thick, add some water we put aside earlier and mash it Then add 1/4 cup mint leaves, 1/4 cup coriander leaves and mix Add 1 teaspoon coriander seeds powder, a little salt, 2 tablespoons clarified butter (ghee) and mix Now add 1/2 teaspoon pepper powder and place the pan on stove Cook for 5-10 minutes on high flame Add the brown onions and mix Cook and mash the mixture till the required consistency is obtained Its time to serve the Haleem now Garnish the haleem with brown onions, coriander leaves, mint leaves, clarified butter (ghee), fried cashewnuts and serve hot!
