Chicken Doria from Kitchen Princess (requested)
Happy Lunar New Year! It’s the Year of the Chicken, so here’s a chicken recipe from Kitchen Princess, as requested here.
Doria, or Baked Rice, is a Western Dish that was passed to Asia and that somehow later died out in the West. Wiki says it was originally from France? My mum used to have a cheat to make quick baked rice - rice, ingredients, then pour some Campbell’s Cream of Mushroom Soup over before topping it with cheese and then grilling it. But today, we’re following the recipe from Chapter 42 of Kitchen Princess! (Image taken from apparently Mangafox, but was found through Google.) It’s like a cross between an omurice and a gratin, and the smell of it triggered certain important memories for Daiichi. It looks slightly weird because I attempted to be healthy and used local brown rice which turned out purple. Oh well.
1 cup rice (uncooked - feel free to use healthier varieties)
1/2 carrot, diced (optional)
Cheddar or other cheese - enough to cover the dish.
I followed their recipe for the sauce quite closely:
salt and pepper, to taste.
Set the rice to cook, or cook it in advance.
In a large frying pan, heat up some oil and saute the onions.
Add in the carrots and chicken, and stir-fry until cooked.
Add in the rice and stir-fry with some ketchup.
Meanwhile, in another pan, melt the butter.
Whisk the flour into the butter, a little at a time.
Whisk the milk into the butter-flour mixture, a little at a time. You might want to lower the heat or it might burn.
Put the rice into an oven-proof dish, pour the sauce over, and top with cheese.
Bake until cheese is melted and golden brown!
It was really filling! (Recipe makes two of these casserole dishes).
