Does fish count as a white meat, or does that cause problems, too? I'm assuming not because maybe sulfites??

Fish would count as white meat, but sadly they tend to get treated with sulfites to keep them fresh (here in the US). They are also a very high histamine food and histamine causes chronic pain and inflammation for me so I tend to avoid them if I can. There’s also a chance I might just be straight up allergic to all seafood now but I need to wait several more months for another allergy test.
