Easy Chocolate Eclair Cake Recipe Delightful Dessert
No-Bake Oreo Peanut Butter Ice Cream Cake
Ingredients:
Crust:
300g Oreo cookies, finely crushed
80g unsalted butter, melted
Filling:
1.5 liters vanilla ice cream, slightly softened
250g creamy peanut butter
100g chopped Oreos
Topping:
120ml heavy cream, whipped
125g creamy peanut butter, melted (optional, for drizzle)
Oreo cookies for garnish
Instructions:
Prepare the Crust:
Combine crushed Oreos and melted butter in a bowl. Press the mixture evenly into the bottom of a 23x33 cm baking dish. Freeze for 10 minutes.
Make the Filling:
In a large bowl, beat softened ice cream until smooth.
Gently fold in peanut butter and chopped Oreos.
Spread the filling evenly over the chilled crust.
Freeze for at least 2 hours or until firm.
Top and Serve:
Top the frozen cake with whipped cream.
Drizzle with melted peanut butter, if desired.
Garnish with Oreo cookies.
Let the cake sit at room temperature for 5-10 minutes before slicing and serving.
Tips:
Softening Ice Cream: Let ice cream sit at room temperature for about 15-20 minutes before using it. This will make it easier to spread.
Whipped Cream: Make sure the heavy cream and bowl are well chilled before whipping.
Freezing Time: For best results, freeze the cake for at least 2 hours before serving, or overnight.
Storage: Cover leftover cake tightly with plastic wrap and store in the freezer for up to 2 weeks.
Variations & Substitutions:
Chocolate Lovers: Use chocolate ice cream and chocolate Oreos.
Coffee Twist: Add a tablespoon of instant coffee powder to the ice cream filling.
No-Peanut Butter: Swap peanut butter for another nut butter or Nutella.
Gluten-Free: Use gluten-free Oreos or another gluten-free cookie for the crust.

No-bake cheesecake with coconut and raspberries
A summer cake, basically :D This is a recipe I made up by combining two different recipes I found online and sticking to neither of them lmao
For the bottom layer I used
150g/1-2 cups biscuits (ground or crumbled)
100g/ 1/2 cup butter (melted)
30g/ 1/4 cup cocoa powder (unsweetened)
65g/ 1/2 cup coconut flakes
mix the finely ground biscuits with the cocoa and the coconut flakes (the recipe I used said you should roast the flakes first but. i didn't do that. because I didn't read it properly), then add the butter once everything is evenly mixed, spread it at the bottom of a cake pan
For the top layer:
350g/12oz cream cheese
200g/7oz sour cream
40g/ 1/4 cup powdered sugar
1 can (400ml) coconut milk
6 gelatin leaves
250g/9oz raspberries (fresh or frozen)
Put the gelatin leaves in cool water to soak In the meantime, mix cream cheese, sour cream and sugar once the gelatin is jiggly, take it out of the water and put it in a small pot together with a bit of the coconut milk. heat it so the gelatine melts, but don't boil it! add the rest of the coconut milk to the cream cheese mixture once the gelatin is melted, let it cool a little and then add some of the cream cheese mixture to the gelatine then slowly put the gelatine into the cream cheese bowl and mix finally add the raspberries to the mixture (if you use frozen ones you should let them thaw a little)
Once this is done, pour the cream cheese mixture on top of the biscuit layer and put the cake into the fridge for a couple of hours, and that's it :D
