I let it rest and proof for 15 minutes before starting the machine. Use the sourdough function with light crust. A good strong sourdough will produce bubbles like you see around the edges of this pan. If you are using a new/weak starter, you may need to let it rest for up to an hour to get the sourdough ready for a good strong rise. The dough will be wetter than regular dough in the beginning. Resist the urge to add more flour. The wheat will absorb the extra moisture as it is worked by the paddles.
