Oatmeal Life Protein Pancakes (Gluten-free, Dairy-free, Kid-approved) By Suni Ferrer Makes 1 meal or 2 snack servings (about 8 mini-pancakes) Dry ingredients: 2 scoops Vanilla or Cafe Latte Shaklee Life Energizing Shake Mix (non-GMO plant-based protein powder with pre/probiotics and Omega-3s) 1/2 cup rolled oats (quick or old fashioned) 1 tsp baking powder 1/2 tsp cinnamon Pinch of Himalayan pink salt or sea salt Wet ingredients: 2 Tbsp oil (I use avocado oil or grapeseed oil) 1 egg (pasture raised is best) 1/2 cup nut milk or water 1/2 tsp vanilla extract optional: 1/4 tsp liquid stevia or to taste Optional Variations: For citrus flavor—add 1 Tbsp Performance Orange hydration mix or 1/4 tsp lemon or orange extract (or zest of lime, half lemon, or Clementine) For chocolate chip treat—add 1 Tbsp mini chocolate chips (Enjoy Life is gluten-free) For pumpkin pie pancakes—add 1/2 tsp pumpkin pie spice and ¼ cup pumpkin puree, tastes great with chocolate chips! Directions for pancakes: Place all dry ingredients in small bowl and whisk together. -In a separate bowl, whisk together wet ingredients, then pour over dry mix, and whisk until batter is smooth. If too thick, add 1 Tbsp water at a time until desired pancake batter consistency. Add chocolate chips last and mix. -Heat nonstick griddle/pan to 300F (medium heat). Melt a teaspoon of organic butter or ghee on the hot griddle or sprinkle with oil (coconut, grapeseed, or avocado oil). Pour about 2 Tablespoons of batter for each mini-pancake. Turn when bubbly (about 2-3 minutes). Cook another 1-2 minutes on other side. Serve warm and enjoy as is, or top with maple syrup, cream cheese, nuts, fresh fruit, fruit preserves, lemon curd, or chocolate nut butter.
