麺打ちとは、小麦粉や水、塩などを使って麺の生地を作り、それを伸ばして切って麺にする伝統的な製麺方法です。麺打ちには、いくつかの手順があります。
まず、小麦粉と水、塩を混ぜて生地を作ります。生地の硬さは、作る麺の種類によって異なります。生地ができたら、それを麺棒を使って薄く伸ばします。この時、生地に空気を含ませるようにしながら伸ばすことが大切です。
